One of our September Gourmet Ice Cream Flavors of the Month is Butter Pecan Ice Cream. We chose Butter Pecan Ice Cream because it is oh so Pecan-nutty good. Our Pecans are some of the finest, we get them from a local supplier Heartland Nuts ‘N More. Check them out! Another reason we chose the flavor was because September 12 is Grandparent’s Day. We know from experience that Grandparent’s (ours especially!!) LOVE Butter Pecan Ice Cream. To make our Gourmet Butter Pecan Ice Cream we start with a creamy, buttery base. From there, we blend these precious Pecans right into it. This creamy, buttery, pecan-nutty base goes into our batch freezer and comes out some of the most delicious tasting gourmet ice cream around. But we’re not done yet! After we have made the perfect batch of Gourmet Butter Pecan Ice Cream we now fold spoonfuls of chopped Pecans into each and every pint! The taste of creamy, buttery, pecan-nutty Ice Cream hits you up front with a crunchy, world’s finest Pecan, finish!
While we are all huge fans of the ice cream itself we decided to take our Butter Pecan Ice Cream to the next level. We thought about what could be better than this Ice Cream? Or what else would we want with it? Eating it with Grandma? Check. A customized label? Check. Watching Grandpa’s face when he realizes we’re out of it? Check. (whoops!). What about Gourmet Ice Cream Sandwiches?? Wow. Now that’s taking regular old delicious Gourmet Butter Pecan Ice Cream and making a meal out of it. I found a recipe of my Aunt Toni’s that I thought might do the trick.
Double Chocolate Oatmeal Cookies
3 cups Sugar
2 cups Butter (the good stuff)
½ cup Water
2 Tsp Pure Vanilla Extract (or ½ Vanilla Bean cut & Scraped)
2-1/2 cups Flour
2/3 cups Cocoa
1 Tsp Baking Soda
1 Tsp Salt
5 cups Quick Oats
12 ounces (1 bag) Chocolate Chips
To get started, turn your oven on. Get it good and hot while you do the mixing. 350 should do. First add Sugar, Butter, Water, Vanilla & Eggs to your mixing bowl. Turn it on your lowest setting until it is entirely mixed and fluffed up a bit. From there, add your Cocoa, Baking Soda & Salt. Again, your lowest setting and just make sure everything gets all mixed in. While the mixer is still on add your flour ½ cup at a time. Now we get to the good stuff. Start adding your Quick Oats one cup at a time and when your through put the bag of Chocolate Chips in let it get all mixed up and you are ready to bake. Drop dollops (Hint: Use an ice cream scoop with a trigger handle for perfectly shaped cookies, exp. Giada’s Ice Cream Scoop) onto ungreased cookie sheet and bake 10-12 minutes.
Voila!!!! Heavenly. These were sooooo good. Sandwiches = Lunch. Our lunches have been so tasty this week. I hope we don’t have to go back to soup & salad next week.
